The frost-free freezers have automatic defrost settings and ventilated refrigeration for a uniform cabinet temperature. The freezers also feature electronic temperature controls from +5C to -25C. The shock freezers ensure proper creaminess, consistency, flavor and shelf life. Without quality blast freezers, gelato may separate; forming ice crystals, as well as the product texture and consistency will be dramatically reduced, creating a grainy inferior product. Holding freezers will allow you to maximize production and help control food costs.
