Meet Your Gelato Course Instructors

Robert Mahler & Maria Coassin

For many years, Equipment & Concepts gelato courses have been led by Maria Coassin, whose expertise, generosity, and passion for artisan gelato have helped shape the success of countless gelato professionals. As the owner and operator of one of the country’s most successful gelaterias for more than 20 years, Maria has shared the real-world knowledge, hard-earned lessons, and gelato-making techniques that have made her a highly respected figure in the industry.

As Maria begins her well-deserved transition back to Italy, she will continue to remain part of the Equipment & Concepts family and will return periodically as a special guest instructor. Taking on the primary role of course instructor is Robert Mahler, one of Maria’s longtime students and a respected gelato artisan in his own right.

Robert’s journey into gelato began in 2010 on the island of Maui, where he developed his skills under the guidance of a third-generation gelato maker before seeking advanced training with Maria Coassin in 2012. Working closely with Maria, Robert learned the art of balancing flavors, ingredients, and textures to create exceptional small-batch gelato. He went on to build a reputation for innovative flavor development, showcasing local ingredients and creating signature flavors that earned recognition throughout Hawaii and later Southern California.

Today, Robert is the co-owner of Capri Gelato & Coffee Bar, with multiple locations and a growing wholesale business. His work has earned industry awards, opportunities to cater high-profile events for brands including Gucci and Snapchat, and a featured appearance on Food Network’s Bobby & Sophie on the Coast with Bobby Flay. Known for his creativity, technical expertise, and commitment to continuous learning, Robert brings both artisan craftsmanship and modern business experience to the classroom.

Together, Maria’s lasting influence and Robert’s hands-on industry success ensure that Equipment & Concepts courses continue to provide students with the practical knowledge, proven techniques, and insider expertise needed to build and grow a successful gelato business. Students will benefit from Robert’s leadership throughout the program, while also enjoying occasional opportunities to learn directly from Maria during select guest appearances.
