Course instructor Maria Coassin has owned and operated her gelateria for over 20 years and her business is arguably one of the most successful gelaterias in the country. Robert Mahler

It all started in 2010 on the island of Maui.  Beginning in the bakery, crafting daily pastries and deli foods, he quickly became interested in gelato making and was able to learn from a 3rd generation gelato maker/baker.  To further his knowledge Robert set out to train with Maria Coassin from Gelatiamo in 2012.  Working with Maria, Robert learned to balance flavors and different ingredients to create the finest small batch gelato.   

Upon his return to Maui, Robert quickly changed over all the old recipes to align them with what he learned and made it a point to showcase local ingredients.  He quickly became known for his gelato on the island working with Mark Ellman (Mala Ocean Tavern), Mick Fleetwood (Fleetwoods on Front Street), Bev Gannon (Gannon’s) and Oprah.  Robert quickly became known for his unique flavor combinations such as his signature flavor Passion Fruit Goat Cheese

In 2016 he and his family moved back to Robert’s hometown of San Diego where he continued to hone his craft.  In 2018 he moved to the Los Angeles area to open Capri Gelato & Coffee Bar with his wife Mary.  Having to navigate Covid during a massive build out Robert was able to take extra time to hone his craft developing a new set of recipes. Upon opening the flagship store in Marina del Rey Robert quickly became known for his unique flavor combinations and introduced southern California to his signature flavor Passion Fruit Goat Cheese.  In 2022 they opened a second location in Hermosa Beach have expanded into the wholesale market. 

Since relocating to Southern California area Robert has made a name for himself in the industry.  In addition to winning several awards, he has catered the Golden Globes, events for Snapchat, Gucci and several private celebrity events.  In September 2022 Robert was featured on “Bobby & Sophie on the Coast” with Bobby Flay airing on the Foodnetwork.  

Robert continues to develop his skill and recipe database by seeking out unique ingredients and flavor combinations that will continue to set him apart from others.
